Protein and caffeine delivered in the form of delicious, fluffy pancakes? Yes, please! These tiramisu protein pancakes are the perfect weekend treat to bump up your morning protein and satisfy that sweet tooth.

If you use a high-quality whey protein, this recipe will make a stack of pancakes with a full 30 grams of protein. Add an Allo protein-boosted coffee or tea for an extra 10 grams and you’re well on your way to your intake goals with your first meal of the day.

Tiramisu Protein Pancakes

Our recipe is a spin on The Protein Chef’s Tiramisu Protein Pancakes With Frosting. While the Greek yogurt and cream cheese frosting is delicious, you can make the pancakes with or without it, they will be amazing either way.

For this recipe, you will need a blender or food processor as well as a large frying pan or a griddle.

You can make the pancakes vegan by using aquafaba instead of egg whites, plant-based milk, a vegan butter extract, and just skipping out on the cottage cheese. As for the flour, you can use whatever kind of all-purpose flour you like, but if you’re looking to avoid gluten, we suggest coconut flour.

While the main tiramisu flavors will still shine through no matter what flavor of protein powder you use, we recommend either vanilla, chocolate, or an unflavored type; although, as always, experimentation is encouraged.

You can also play with the flavor of the frosting by trying different types of sweeteners or adding a few drops of a flavor extract or even some food coloring to give your pancakes a pop of color. 

Pancake Ingredients:

  • ¼ cup milk of choice
  • 2 large egg whites or 6 tablespoons of liquid egg whites
  • ¼ teaspoon butter extract
  • ¼ teaspoon coffee extract
  • ¼ teaspoon rum extract
  • 2 tablespoons cocoa powder
  • ½ teaspoon ground cinnamon
  • ½ cup cottage cheese
  • 4 tablespoons flour of choice
  • 1 scoop protein powder 
  • 1 teaspoon instant espresso or coffee
  • 1 teaspoon baking powder

Frosting Ingredients:

  • 5 ½ tablespoons Greek yogurt
  • 4 tablespoons cream cheese 
  • 1 tablespoon sweetener of choice

Pancake Instructions:

  1. Combine the dry ingredients into your food processor or blender then add the wet ingredients on top.
  2. Secure the lid and blend until well mixed.
  3. Coat your griddle or frying pan with non-stick cooking spray and turn the heat to medium-high
  4. Pour your pancake mixture onto the cooking surface and let cook until bubbles form across the whole surface of the pancake, usually 1-2 minutes.
  5. Flip and continue cooking for another 1-2 minutes.
  6. Remove from heat and repeat until you have used all of the pancake batter.

Frosting Instructions:

  1. Mix your frosting ingredients together in a bowl until smooth.
  2. Spread on top of your pancakes and enjoy!
