Snickerdoodle Protein Bites Recipe

Try these scrumptious snickerdoodle protein balls for a healthy no-bake snack to satisfy your sweet tooth. These tasty energy balls are perfect for pre-workout to give you the protein and carbs you need to fuel you through your exercises.

This healthy recipe gives you the sweet snickerdoodle flavor without any refined sugar for a healthy snack that’s perfect for every day but will also be a big hit at any party.

Snickerdoodle Protein Bites

This recipe was developed in our Allo kitchens as a go-to pre-workout snack that you can make in batches and keep in the refrigerator or freezer to have on hand throughout the week.

In addition to being vegan-friendly, this recipe is also gluten-free, although if you have an allergy or sensitivity it is best to make sure that the oats you are using clearly state that they have been processed in a gluten-free facility.

You can use any type of oats for this recipe, although we found that old-fashioned rolled oats worked best. Similarly, feel free to experiment with different types of nut butter. If you don’t have any dates, you can substitute a half cup of maple syrup or honey.

Protein Bite Ingredients:

  • 1/2 cup of oats
  • 1/3 cup almond butter
  • 1/2 cup of dates
  • 1/4 cup of flaxseed
  • 1 ½ teaspoon of cinnamon
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of coconut oil

Powdered Coating Ingredients:

  • 1 tablespoon of coconut sugar
  • 1/2 teaspoon of cinnamon

Instructions:

  1. Combine your dry ingredients, dates, and peanut butter in a food processor or blender and blend until well mixed and all ingredients are a uniform size.
  2. Add the coconut oil and continue blending until the dry ingredients are mixed into a dough.
  3. Measure out uniform amounts of the dough using a measuring spoon or a small ice cream scoop and roll them into balls before placing them on a plate or cookie sheet.
  4. Combine the powder coating ingredients in a small bowl, shallow dish, or plate then dip the bites in the powder and replace them on the plate or cookie sheet. 
  5. Drizzle over with chocolate syrup or melted semi-sweet chocolate and enjoy!
